West Lake Longjing Tea Picking:

West Lake Longjing is mainly picked in spring, especially around Qingming festival, when the tea leaves are the most tender. The picking standard of Xihu Longjing is very strict, the tea leaves must be picked with one bud and one leaf or one bud and two leaves at the beginning of the show, so as to ensure the quality and taste of the tea. During the plucking process, the tea pickers need to keep the buds and leaves intact, fresh and even, without any impurities such as tips, scales, fish leaves, old leaves, young fruits, diseased leaves and other impurities. The quality of tea leaves picked by experienced and professional tea pickers is guaranteed. We strictly select every bud and leaf to serve you a cup of good quality tea. One catty of dry tea requires about 6 catties of fresh tea, which is hand-fried for 6-8 hours by masters with more than 30 years of experience in tea stir-frying.

West Lake Longjing Production Process:

Fresh leaf picking: follow the principle of ‘early, tender, and diligent’ to pick the tender fresh leaves.

Fresh Leaf Spreading: The fresh leaves are spread out to remove some of the water and grassy flavour.

Kill the green: In the pot of 100–120°C, through grasping, shaking, hitching, pressing, and other techniques, the fresh leaves are preliminarily shaped to emit moisture and reduce the grassiness, and the colour and shape of the tea are basically shaped.

Refluxing: The tea leaves after greening are spread out so that the water on the surface reaches the balance again.

Fai Pan: In the pan at 60–70°C, through grasping, withholding, grinding, pressing, pushing, and other techniques, the tea leaves are further shaped to meet the requirements of flat and smooth, and at the same time, the inner quality of the tea leaves is enhanced, and the water content is reduced for preservation.

Sieving and stacking: The fried tea leaves are sieved to remove impurities and stacked according to the quality.

Xihu Longjing Tea Brewing Method:

1. water temperature: 85-95 ℃ boiling water (do not use the boiling water, before brewing, it is best to cool the soup, that is, in the kettle set aside for a few moments before brewing).
2. the amount of tea brewed: 3g / cup (or according to personal taste).
3. the choice of water: pure water or spring water (Nongfushanquan is very good; multiple boiling will reduce the oxygen content of the water, affecting the taste of tea).
