Tie Luo Han tea, a type of Oolong tea, was created during the Qianlong period of the Qing dynasty. It is produced in Wuyishan, northern Fujian, China, and is one of the four most famous teas from Wuyishan. Our Tie Luo Han tea is usually picked in the spring, especially in early May, when the tea shoots are young and tender, which is the best time to pick the tea leaves. When picking, the tea farmers will carry bamboo baskets on their backs and scatter in front of the tea bushes. They will gently cut the new shoots with their index and middle fingers, holding the stem of the tea leaf. The best standard is ‘one heart, two leaves’. This process requires great care to avoid excessive damage to the tea bush and tea leaves, as well as to avoid picking too much tea from the same tree, in order to ensure the quality and yield of the tea.

Tie Luo Han tea production is a very complex process, involving multiple steps such as withering, cooling, fixing, stir fixation, primary rolling, secondary stir fixation, secondary rolling, water roasting, sorting, cooling, picking, re-roasting, re-sorting, and fire supplementing. Each step requires the tea master to rely on his or her extensive experience and superb skills to control precisely. The slightest carelessness may affect the quality of the tea.

Withering‌: The picked tea leaves are spread evenly on a bamboo mat or concrete floor and exposed to the sun for Withering, which causes the leaves to lose water and lays the foundation for subsequent Qing.

Cooling‌: The tea leaves are placed indoors for cooling after withering, where they continue to ferment under suitable temperature and humidity conditions, further releasing the grassy aroma and enhancing the tea aroma.

Aroma-Developing Leaf Shaking: The tea leaves are shaken and tumbled in the Aroma-Developing Leaf Shaking process to further fermentation and oxidation, which gives Tie Luo Han its unique aroma and taste.

Stir Fixation: The tea leaves are quickly stir-fried at high temperature in the Stir Fixation pan to destroy the enzyme activity in the tea leaves, stop fermentation, and soften the leaves for subsequent rolling.

Drying‌: Through multiple steps such as natural air drying and re-drying, the moisture in the tea is further dried to enhance the aroma and remove the bitterness, while also making the tea leaves more tightly bound and the color more lustrous.

Tie Luo Han Tea Brewing Method:

  1. Prepare the tea set‌: We recommend using a purple clay teapot or porcelain tea set. A glass cup of about 200 ml is also a good choice. These tea sets can fully display the aroma and taste of Tie Luo Han tea.
  2. Take the tea‌: Depending on the size of the teaware and personal taste, take the appropriate amount of Tie Luo Han tea. Generally speaking, 5g of tea leaves is suitable for a 200ml glass, while 3g is suitable for a medium-sized teapot.
