Longjing Tea Production:
Picking Time: Longjing green tea is usually picked at the beginning of April every year, when the season is full of light and rainfall, which is very suitable for the growth of the tea bush, and the quality of the raw materials of the picked tea is also the best.
Picking Methods: Due to the high tenderness of the tea leaves, Longjing's picking is based on the buds, which are basically hand-picked, and the cost is high.
Production process: The tea leaves after picking are carefully made through a number of processes, such as tea harvesting, fixation, rolling, and roasting. Among them, fixation is the key step, destroying the enzyme activity through high temperature, so that the tea leaves remain green, and at the same time, exudes grassy air, forming the tea aroma.
How to Brew Longjing Tea:
Brewing Longjing tea water ratio of 1:50 is appropriate, and the temperature of the tea water is 75-85°C, boiling water to stand for about 4 minutes:
- Tea Throwing: Use glass cups or covered bowls to put in about 3g of tea leaves;
- Shake the tea: fill the water to cover the tea surface, shake the teacup until the tea leaves fully percolate;
- Prepare water: high body kettle, lift up and down to fill water repeatedly 3 times;
- Tea tasting: Drink for one-third of the time to add water again to make and maintain the concentration of tea.
