Pingyang Huang Tang, also known as Wenzhou Huang Tang, is a yellow tea that belongs to one of the six major tea categories. It is a specialty of Pingyang County in Wenzhou City, Zhejiang Province, and is also a geographical indication product for agricultural products in China. Pingyang Huang Tang has fine, tight, and slender strips with a yellowish-green colour and a lot of hairiness; the soup is bright orange-yellow in colour, the infused leaf is tender and even, the aroma is pure and lofty, and the taste is fresh and sour. The finished tea is known for its ‘three yellows’: the yellow colour, the yellow broth, and the yellow infused leaf. Ping Yang Huang Tang was created during the reign of Emperor Qianlong in the Qing Dynasty and was listed as a tribute product. Today, Ping Yang Huang Tang is one of China's famous teas and is renowned at home and abroad.

Ping Yang Huang Tang Picking and Production:

Our Ping Yang Huang Tang tea has very strict picking standards. It requires picking one bud with one leaf just beginning to unfold to one bud with two leaves, and the tea bush should have 10 to 15 standard buds per square meter. This picking standard ensures the tenderness and quality of the tea leaves and lays a good foundation for subsequent processing. The production process of Ping Yang Huang Tang is unique and mainly includes the following steps:

  1. Fixation: The temperature is about 160°C, and the amount of leaves is 1–1.2 kg. The leaves must be evenly and thoroughly fixed until they are soft and dark green in colour.
  2. Rolling and Twisting: This continues in the fixation pot, with the temperature lowered. The leaves are rolled and twisted until they are mostly in the form of strips, and they are removed from the pot when they have lost 50–55% of their weight.
  3. Pile the rolled leaves in layers about 20 cm thick on a bamboo tray. Cover with a white cloth and leave to stand for 48–72 hours, until the leaves turn yellow. Then they are ready for the first firing.
  4. Initial firing: Use a bamboo steamer to roast the leaves, placing about 1.2 kg in each steamer. Roast for about 15 minutes, stopping when the leaves are 70% dry.
  5. Steaming: After initial firing, spread the leaves out to cool properly, pack them in cloth bags (1–1.5 kg per bag), place the bags on the steaming rack, and let them steam for 3–4 hours until they reach 90% dryness (the leaf temperature should be around 30°C).
  6. Then, sift the leaves to remove any fine particles, reheat them until they are completely dry, and then package them

Ping Yang Huang Tang Tea Brewing Method:

  1. Tea quantity: The ratio of Ping Yang Huang Tang tea to water is roughly 1:40, i.e., about 3g of dry tea per cup, with 100-150ml of boiling water added.
  2. Water temperature: It should not be brewed with 100°C boiling water, and generally 80°C is appropriate.
  3. Brewing time: After brewing with boiling water for 3-5 minutes, most of the active ingredients have leached out, and it can be drunk quickly at once. The subsequent brewing time needs to be increased accordingly.
