Min Hong Gongfu Tea Production Process:

The production process of Min Hong Fu tea mainly includes picking, Withering, Rolling, Fermentation, Hot air drying, Screening and other processes:

Picking: choose the young buds and leaves in spring as raw materials, requiring one bud and two leaves or one bud and three leaves to ensure the quality and taste of the tea.

Withering: The plucked tea leaves are spread in a ventilated place and allowed to wither naturally, so that the water in the tea leaves evaporates properly and the tea leaves become soft, which is conducive to the subsequent Rolling.

Rolling: Rolling the tea leaves after Withering, so that the internal substances of the tea leaves are fully released, which is conducive to the Fermentation process. Rolling should be done with good strength and time to avoid damaging the tea leaves.

Fermentation: The tea leaves after Rolling will undergo Fermentation, during which the tea leaves will undergo Oxidation to produce the characteristic color and aroma of black tea. During Fermentation, the temperature and humidity should be controlled to ensure the quality of the tea leaves.

Hot air drying: After Fermentation is completed, the tea leaves should be hot air drying to reduce the moisture in the tea leaves for easy preservation. Hot air drying should control the temperature so as not to affect the quality of the tea.

Screening: After Hot air drying, the tea leaves are sifted and graded according to size and shape to improve the quality of the tea.

Packing: The tea leaves after Screening are packed, usually in aluminum foil bags or iron boxes and other sealed packages to ensure the freshness and taste of the tea.

Min Hong Gongfu Tea Brewing Method:

The brewing method of Min Hong Fu tea can be summarized in the following steps:

  1. Preparation: Prepare the tea utensils, such as tea tray, covered bowl, fairway pot, boiling kettle, tea ceremony set, tea strainer, filter holder, tea canister, tea towel, etc. The tea cups and coasters should be made according to the tea brewing method, so as to ensure the freshness of the tea leaves. Tea cups and coasters are prepared according to the number of tea drinkers.
  2. Warm the cups: open the lid of the gaiwan, fill half of the volume with boiling water, and then pour out the water to warm the cups.
  3. Appreciate tea: take appropriate amount of tea leaves into the tea cup, observe its shape, dry color, dry fragrance and other quality characteristics. The general appearance of Min Hong Fu tea is tight and evenly, the color is dark and moist, and there is a sweet or fruity aroma when smelling it.
  4. Add tea leaves to the teapot: Use tea leaves or teaspoon to put tea leaves into the teacup, the amount of tea is generally controlled at about 5 grams, and the ratio of tea to water is about 1:20~30.
  5. Rinse the tea: fill the tea cup with boiling water until full. Use ou cover to scrape off the foam, pour the tea soup into the fairway pot. This first open tea soup is generally used to pour out the tea cups, the requirement of pouring out the tea time should be short (about 55 seconds or so), the speed should be fast, in order to avoid too much leaching out of the active ingredients within the tea leaves. After the first tea soup is finished, the tea leaves are warmed and moisturized in the tea cups to be woken up.
  6. Awaken the tea leaves: After the first tea broth is exhausted, it is not necessary to fill the cup with water immediately, but let the tea leaves stay in the gaiwan for about a minute, so that it is warm and moist in the “awakening” over, in order to facilitate the brewing of the tea nature of the glowing.
  7. Brewing: When the tea leaves “wake up”, the second boiling water into the tea cup. When brewing, ask the handheld boiling kettle, make the water line rise and fall, the boiling water and the tea leaves to produce impact, in order to help the tea flavor play. Next, scrape off the foam with the ou cap, cover it, and let the tea leaves steep in the tea cup for 1~2 minutes.
  8. Pour out the tea: Place the tea strainer on the fairway pot, ready to pour out the tea. Once the brewing time is up, pour the tea broth into the fairway pot. When pouring out the tea broth, the tea cup should be lowered and close to the fair pot to prevent the aroma and heat of the tea broth from being lost, and to avoid splashing or foaming of the tea broth. Next, slowly pour the tea from the fairway pot into the tasting cup, but do not overfill it.
  9. Serving Tea: Pick up the tea cup, drain it on a tea towel, put a coaster on it, and serve it to the guest with both hands. In order to avoid spilling the tea or burning the guests, it is advisable to place the tea cup on the tea table in front of the guests, rather than letting them take it by hand.
  10. Tea tasting: Pick up the tea cup, slowly smell the fragrance and color from far and near, and then taste it with a small mouth, let the tea flow to the whole mouth, fully appreciate the fragrance of the tea leaves and then swallow it slowly.
