Meizhan tea: We have strict standards for picking Meizhan tea: usually one bud and two leaves or one bud and three leaves, and the best time to pick is between 12 noon and 3 pm. When picking, the tea farmer uses the index finger and thumb to hold the middle of the young stem between the leaves and breaks off the tea leaf with the elasticity of the two fingers. It should be noted that Meizhan tea is less durable, so care must be taken when picking to avoid damaging the tea leaves.

The production process of Meizhan tea is very complex and mainly includes the following steps:

Sunlight withering: The freshly picked leaves are spread evenly on a bamboo mat and placed in the sun to wither. Sunlight withering can accelerate the evaporation of water in the tea leaves, reduce the water content of the cells, and at the same time help air enter the leaf cells, removing the bitterness and grassy taste of the tea.

Aroma-Developing‌: Aroma-Developing is a unique production process for Oolong tea and is also a key process in forming the excellent quality of Oolong tea. Aroma-developing includes two processes: Aroma-Developing Shaking and Aroma-Developing Drying, which need to be repeated alternately many times. Aroma-Developing Shaking promotes the transfer and penetration of water and water-soluble substances from the stems to the leaf surface, causing the leaf edges to lose water and become replenished and'return to green’ and upright; aroma-developing drying causes the leaf edges to wilt and soften due to water evaporation.

‌Stir fixation: The tea leaves are placed in a frying pan and stir-fried. The purpose of stir fixation is to destroy the activity of enzymes, stop the fermentation of the tea leaves, and at the same time further evaporate the water in the tea leaves to enhance the fragrance.
