Huo Shan Huang Ya Picking:

The picking of our Huo Shan Huang Ya begins in early April each year and lasts for about a month. The picking standards are also very strict. We require the picking of tender one bud and one leaf or one bud and two leaves that are just beginning to unfold to ensure that the tea leaves are very fresh. The picking is done according to the principle of ‘three consistencies’ (consistency in shape, size, and colour) and the principle of ‘four no's’ (no picking tea leaves affected by frost, no picking tea leaves affected by pests, no picking buds that have opened, no picking purple tea leaves). Our picking standards ensure the high quality of Huo Shan Huang Ya.

Huo Shan Huang Ya Production Process:

Huo Shan Huang Ya belongs to the six traditional Chinese tea categories and is yellow tea. Its process features an additional step of ‘heaping for yellowing’ on the basis of green tea, which makes the quality very different from that of green tea, especially the aroma is more intense. Its production process is delicate and complex, mainly including the following steps:

Fixation‌: The temperature of the pot must reach a certain temperature, and the amount of leaves added to each pot should be moderate. The leaves are taken out of the pot after being shaped like a bird's tongue by grasping, shaking and shaking.

Mao huo‌: The temperature of the wok is high, and the tea leaves are stirred frequently until about 70% of the aroma has been released.
Heaping for yellowing: While still hot, the tea leaves are spread out in a basket and left to turn yellow for two days, until they are slightly yellow.

Zu Huo: The temperature of the wok is just right, and the tea leaves are stirred every few minutes until they crumble when twisted.

Sorting‌: Remove impurities such as yellow leaves, floating leaves, and red stems to produce the finest Huo Shan Huang Ya.

Brewing Method For Huo Shan Huang Ya:

1. Prepare the teacup‌: Prepare a colourless and transparent glass to better appreciate the appearance of the tea in the water
2. Choose the water: Choose soft water that is clear, light, and sweet, such as spring water or stream water. Boil the water until it reaches about 80 degrees
3. Put tea leaves into the teapot. The ratio of tea leaves to water is roughly 1:50, i.e., about 2g of tea leaves per cup and 100ml of water.
4. Steep: Use the ‘whirling infusion method’ to gently infuse the water. Fill with water to about 1/4 to 1/3 of the cup capacity, and steep for 20 to 60 seconds.
   
5. Brewing‌: Raise the kettle so that the water rushes in from above, and lift it three times, i.e., ‘the phoenix nodding three times’, to fill the cup about 70%.
6. ‌Appreciating tea‌: First, admire the tea broth, looking at the colour, smelling the fragrance, and appreciating the shape, and then sip the tea while it is still hot.
