Huang Jin Gui tea is native to Anxi County in Fujian Province and is another top-quality oolong tea. Huang Jin Gui is an oolong tea made from the young shoots of the Huang Dan variety of tea bush. It is named Huang Jin Gui because the tea liquor is a goldenyellow color and has a strange fragrance similar to that of osmanthus. Huang Jin Gui was cultivated by tea farmers during the Xianfeng period of the Qing Dynasty (1850–1860). It was later cultivated on a large scale in the southern and northern parts of Fujian Province, becoming a well-known tea among the southern and northern oolongs.

Huang Jin Gui Tea Picking and Production:
Huang Jin Gui is another superb oolong tea with a style that is different from Tieguanyin. The picking and production process is very particular. Only by mastering it can the characteristics of the variety be brought into full play. Our picking standards for Huang Jin Gui are: after the new shoots have grown and formed buds, the top leaves are picked when they have early unfolding leaves or middle unfolding leaves, with two or three leaves. If the leaves are too young, the tea aroma will be low and the taste bitter; if they are too old, the taste will be weak and the aroma coarse. Otherwise, the same picking requirements as Tieguanyin apply, with the best material being picked between 2 and 4 pm in the afternoon. The initial processing techniques are basically the same as for Tieguanyin, but attention should be paid to the characteristics of the yellow variety:
- The yellow stems are small, the leaves are thin, the water content is low, the stomata are large and dense, and they are prone to fermentation. Withering should be lighter than for Tieguanyin, and a loss of 5–7% is appropriate.
- Aroma-Developing Leaf Shaking should be done lightly, as heavy shaking will cause the leaves to turn red and affect the aroma. The first few times, the time spent on cooling the leaves should be kept short to keep the leaves fresh. The fourth Aroma-Developing Leaf Shaking can be done a little more heavily. After 4-5 Aroma-Developing Leaf Shakings and Coolings, when the fresh green leaves have lost their freshness and a light fragrance has emerged, exuding a rich floral aroma, and the leaves are a glossy yellow-green color with a green leaf base and vermilion leaf edges curled towards the back of the leaves, then the stir-frying and rolling can begin.
- Fixation time should be short but thorough.
- Huang varieties place emphasis on pure aroma, so the roasting temperature should be slightly lower and the fire should be slightly lighter. Tea-tasting results of Huang Jin Gui made from Huang varieties show that the tea is tightly twisted into thin strips with a shiny goldenyellow color. The aroma is elegant and fresh, with an osmanthus fragrance, and the taste is mellow, sweetandfresh. The tea liquor is a bright goldenyellow colour, with an infused leaf that is yellow-green in the centre and vermilion at the edges, which is soft and bright.
Huang Jin Gui Tea Brewing Method:
When brewing Huang Jin Gui Tea, you can choose teaware such as a gaiwan or a purple clay teapot. Adjust the amount of tea leaves put into the teapot according to personal taste and the size of the teaware. The water temperature should be controlled at close to 100 °C to fully bring out the aroma and flavor. The brewing steps are as follows:

Rinse the teapot and warm the cups: Before brewing, rinse the teaware with boiling water to remove any foreign odours and to warm the teaware, which will help the tea to brew more easily.
- Put tea leaves into the teapot: Put the prepared Huang Jin Gui tea leaves into the teapot or purple clay teapot.
- Pouring water: Use boiling water that is close to 100 °C for brewing. The first brew is usually for washing tea, i.e., pouring out the water immediately after pouring in the water to remove impurities and dust on the surface of the tea leaves.

Steeping: The first brew is usually about 45 seconds, and the second brew is about 60 seconds. After that, the brewing time can be increased by a few tens of seconds each time.
- Pouring the tea: Pour the brewed tea into the goblet, and then divide it into the cups. When pouring the tea, try to drain the tea as much as possible to avoid affecting the taste of subsequent brews.
- Sipping the tea: Once the tea has reached the right temperature, you can start sipping. When sipping, first smell the fragrance to see if the tea has a heavyflavour that lasts; then taste it to see if the tea is mellowandthick and sweetandfresh.
