Gongmei tea is a type of white tea that is one of the six major types of tea in China. It is mainly produced in Fujian Province and is the most highly produced variety of white tea, accounting for more than half of the total production. It is made from the buds and leaves of the tea bush and has the characteristics of spring water and autumn fragrance. It is also resistant to brewing and can be boiled. The older it gets, the better the quality. Gongmei white tea has a distinct heart shape, a bright green colour, and an orange or dark yellow brew. It has a mellow flavour and pure aroma and is considered a fine white tea.

Gongmei Tea Picking And Production:
The picking standard for Gongmei tea fresh leaves is one bud and two to three leaves. When picking, it is required that the tea buds contain tender buds and strong buds. The basic processing techniques for Gongmei are: withering, hot air drying, sorting, roasting, and boxing. Withering has two purposes: firstly, to ‘get rid of the water’, i.e., to remove the water (a surface issue), and secondly, ‘biochemical’ (an internal issue), i.e., to cause a series of biochemical changes in the tea leaves due to certain water loss conditions. The changes also follow the changes in the moisture content of the tea leaves, from slow to fast, and then from fast to slow, until they are completely dry. The biochemical process of ‘withering’ in Gongmei is also the process of ‘fermentation’. Therefore, Gongmei is white tea and also ‘lightly fermented tea’. Processing Gongmei, the quality of full withering is the best. The colour is greyish-green or bright emerald green, shiny and lustrous. Only then will the heart of the bud be white, the leaves lie flat, the two edges are slightly drooping and curled, the leaf surface has obvious ripples, and when smelled, there is no ‘green smell’ but a pleasing, clear aroma.
How To Brew Gongmei White Tea:
