Fuding white tea is a specialty of Fuding City in Ningde City, Fujian Province, and a Chinese geographical indication product. The main varieties are: Baihao Yinzhen, Bai Mudan, Gongmei, and Shoumei. It has the characteristics of white tea, such as being refreshing, clearing away heat, lowering internal fire, relieving summer heat, and detoxifying. The production techniques of fuding white tea have a long history. As early as the early years of the Jiaqing period of the Qing Dynasty (1796), Fuding tea farmers began to use the strong buds of Cai tea to make Baihao Yinzhen. In recent years, as one of the representatives of Chinese tea culture, Fuding White Tea has continued to go global, making continuous efforts to promote Chinese tea culture to the world.

Fuding White Tea Picking:
We have the following requirements for picking Fuding white tea:
- Time of picking: The picking of raw materials for Fuding white tea is carried out before Qingming each year, and the picking of raw materials for high-grade Bai Mudan is carried out before Gǔyǔ each year. The picking of raw materials for other products can be carried out during the production season of the tea season.
- Picking principles: Fuding white tea adheres to the ‘ten no-picks’ principle, i.e., no picking in rainy weather, no picking while dew is still wet, no picking of thin shoots, no picking of purple buds, no picking of artificially damaged shoots, no picking of insect-damaged shoots, no picking of open buds, no picking of hollow buds, no picking of diseased buds, and no picking of frost-damaged buds. White peony insists on the ‘three no-pickings’: first, it is not picked before the season; second, it is not picked in rainy weather; and third, it is not picked before the dew dries.
- Picking standards: The raw material for our fuding white tea is only one single bud, while the raw material for white peony is one bud and one or two leaves. The new process of white tea picks one bud and one to three leaves.
Fuding White Tea Processing:
Our Fuding white tea is processed using traditional methods, which mainly include withering, sorting, and baking.
Withering: We use the natural withering process for spring tea, with a temperature of 15°C to 25°C. Withering time: The total duration of natural withering in normal weather is 40–60 hours. The moisture content of withered leaves at the end of withering is 18% to 26%; degree of withering: withered buds and leaves are silvery white in colour, and the leaf colour changes to greyish-green or dark green; the leaf edges shrink naturally or curl downwards, and the bud tips and young stems are in a ‘cocked tail’ shape. Withering involves a series of complex biochemical changes that enhance the quality of the tea.
Sorting: remove wax leaves, yellow leaves, reddish leaves, coarse old leaves and non-tea impurities;
Roasting: Roast 2 to 3 times at a temperature of 80°C to 110°C for 10 to 20 minutes.
Fuding White Tea Brewing Method:
Before brewing Fuding white tea, you need to pay attention to the following points:

Water quality selection: It is best to use soft water to brew Fuding white tea to avoid the minerals in the water reacting with the ingredients in the tea and affecting the taste.
- Water temperature control: The brewing temperature for Fuding white tea is generally between 85°C and 95°C. This temperature can fully release the aroma and flavour of the tea without damaging the nutrients in the tea.
- Tea quantity: Generally speaking, the recommended tea quantity for brewing Fuding white tea is between 3g and 5g. The specific amount can be fine-tuned according to personal taste and the quality of the tea.

Brewing times: Fuding white tea can generally be brewed 3 to 5 times, with the brewing time gradually increasing each time. The first brew should be slightly shorter as the tea leaves have not yet fully opened. As the number of brews increases, the tea leaves gradually open up, and the brewing time can be appropriately extended.
- Brewing method: Choose a transparent glass of about 200 ml, put in 3-5 g of Fuding white tea, and use boiling water at about 90 degrees to first wash the tea to warm it and let the fragrance waft. Then brew the white tea directly.
