Fenghuang Shuixian Picking:
Our picking standards for Fenghuang Shuixian are very strict: we select the tender shoots after the buds have formed and when the first leaf has unfolded to the middle. The best time to pick is in the afternoon, when the tea leaves are moderately mature and the aroma and taste are at their best. When picking, we require that ‘the sun is not too bright, it is not picked in the morning, and it is not picked when it is drizzling’, to ensure the freshness and quality of the tea.
Fenghuang Shuixian Production:
Sun fixation: The freshly picked leaves are spread thinly on a bamboo mat or sun fixation rack to wither in the sun. The degree of sun fixation is determined flexibly according to the weather and the specific conditions of the tea leaves.
Shaking to enhance tea aroma: After sun fixation, the tea leaves are shaken and spread out to cool so that the tea reaches the optimum degree of fermentation.
Fixation: The activity of the enzymes is destroyed by high temperatures, which stops fermentation and stabilizes the quality of the tea.
Rolling: The tea leaves are pressed into strips to squeeze out the juice and make the tea more compact and attractive.
Roasting: Roasting is carried out in three stages to achieve the ideal degree of drying and further enhance the aroma of the tea.
Fenghuang Shuixian Brewing Method:

Warming the cups: Choose a purple clay pot or a covered bowl as the main brewing vessel, and warm the lid with boiling water in advance.

Add tea leaves to the teapot: Add tea leaves to the teapot at a ratio of 1/3 to 1/2 of the capacity of the teapot, adjusting according to the tightness of the tea leaves and personal taste.
- Pouring water: Use 100°C boiling water and slowly pour it along the edge of the teaware to avoid directly impacting the tea leaves.

Pouring out the tea: Pour out the tea no more than 3 seconds after the first infusion. The time for subsequent infusions can be extended appropriately, but not for too long, to avoid the tea broth becoming bitter.
