Picking and production of Feng Huang Dan Cong tea
Our Feng Huang Dan Cong tea is picked under very strict conditions: between 1 and 4 p.m., when the leaves are neither too young nor too old. The standard is to pick two leaves and leave one leaf, generally picking the second leaf from the third leaf on the shoot. The picking is done to avoid the morning, the midday sun, the evening, and rainy weather to ensure the quality of the fresh leaves.
Sun fixation: The purpose of sun fixation is to expose the tea leaves to sunlight to evaporate some of the water and grassy aromas, enhance the activity of polyphenol oxidase, and create conditions for the subsequent fermentation process of tea leaf conditioning.
Withering: After sun fixation, the tea leaves are moved to a ventilated area indoors to release the heat and lower the temperature, which further releases the moisture.
Tea leaf conditioning: Tea leaf conditioning is a key process in the formation of aroma and includes the three processes of shaking to enhance tea aroma, shaking to enhance tea aroma, and static conditioning, which are carried out several times alternately. By damaging the edges of the tea leaves, the activity of the enzymes is promoted, which releases, aggregates, and ferments the polyphenol substances, forming a heavyflavour.
Fixation: The purpose of fixation is to inhibit enzymatic oxidation of the tea leaves at high temperatures and to control the formation of the color, aroma, and flavor of the tea. Stir fixation is generally used to stop the fermentation of the tea leaves and volatilize low-boiling aromatic substances.
Rolling: Rolling is a key step in shaping the Dan Cong. It makes the tea leaves tightly bound, breaks the leaf cells, and causes the tea's contents to ooze out and adhere to the leaf surface.
Roasting: Roasting is divided into three stages: primary roasting, cooling, and secondary roasting. The purpose is to evaporate excess water in the leaves, promote the thermalization and aromatic effect of the leaf contents, and enhance and stabilize the quality.
Feng Huang Dan Cong tea brewing method:
- Prepare tea set and water: Choose a high-quality thin porcelain covered bowl or a purple clay pot as the brewing utensil, and use natural mineral water as the brewing water. Purified water and tap water are second best.
- Add tea leaves to the teapot: Add about 7 grams of tea leaves to the teapot, and adjust the amount according to personal taste and the size of the teapot.
- Warm the cups: Rinse the teaware with boiling water to warm it up and enhance the tea aroma.
- Pour in the water: The water temperature should be between 95 and 100 degrees Celsius, and it is best to use boiling water that has been kept boiling. Pour the water in a high stream to fully immerse the tea leaves in the water.
- Pouring out the tea: The first brew is usually used to wash the tea and is not drunk. Use the lid of the pot to scrape off any scum. The subsequent brewing time can be adjusted flexibly according to the nature of the tea, the season, the variety, and personal preferences. Generally, the brewing time for the first to sixth brews is 3-5 seconds, 7-12 brews is 5-10 seconds, and 13-20 brews is 10-20 seconds.
- Divide the tea: Pour the tea into a fair cup and divide it into individual cups for drinking. Pouring from the top reduces spillage of the tea and tea aroma and helps to maintain the temperature of the tea.
- Appreciate the tea: Observe the color of the tea, which is usually amber or dark goldenyellow; smell the aroma and experience the unique fragrance of the tea; and taste the tea to experience the layers and aftertaste of the tea.
