Anji White Tea Picking And Production:

We have extremely strict requirements for picking Anji white tea. Anji white tea is a low-temperature sensitive tea, and the picking time is very limited, usually only about one month, and the tender buds picked before Qingming are best. These tender buds are white or jade white in colour, with a tender green hue and even in size, ensuring the high quality of the tea. When picking, it is required to pick in batches multiple times early, tenderly, diligently, and cleanly to ensure the quality of the fresh leaves.

The production process of Anji white tea is meticulous and complex and mainly includes a series of processes such as picking, spreading, fixation, alignment, initial roasting, re-roasting, and finishing. Our tea masters pour their exquisite skills into this process. In particular, fixation and alignment require shaking and aligning in the same direction in a slowly bottomed iron pan, combining tossing with smothering, and using force first lightly, then heavily, and then lightly again to prevent the leaves from breaking and ensure that the tea strips form a beautiful shape.

Anji white tea also has its own unique characteristics in the roasting process. During the initial roasting, an iron pot is placed under the roasting basket, and gauze is placed on the basket. Hot air drying is used to speed up drying and prevent the aroma from becoming dull. After that, the tea is spread out to cool and then re-roasted to further dry it and enhance the aroma. Finally, impurities are removed, and the tea is stored in a bag of lime ash to keep it dry and aromatic. These unique production processes give Anji white tea its beautiful shape and evenly-shaped tea leaves. The tea leaves contain buds and are shaped like phoenix feathers. The tea is a bright green colour, and the young green colour of the tea on both sides of the veins is shiny and oily. After brewing, the tea broth is a bright green colour with a strong and lasting aroma. It has a refreshing and tender taste that is unforgettable.

How To Brew Anji White Tea:

1. ‌Tea set selection‌: A transparent glass cup is the best choice, as you can appreciate the way the tea leaves sink and rise in the water and also smell the fresh aroma of the tea.
   
2. Water temperature control‌: The brewing temperature for Anji white tea should not be too high. It is usually appropriate to let the boiled water stand for about 3 minutes and control the water temperature at 80-85 °C. Too high a temperature will destroy the delicate taste of the tea.
   
3. Warm the cup‌: Before pouring the tea, rinse the cup with hot water to warm it and remove any cold.
   
4. Tea-to-water ratio‌: Generally, it is 1:50, i.e. 5g Anji white tea requires 250ml of water. This ratio ensures that the tea broth has the right body but is neither too weak nor too bitter.
5. ‌Waking and moistening the tea‌: First fill a glass with 1/4 of water, then shake it clockwise to allow the tea leaves to absorb water and expand. This step is also known as ‘waking the tea’ and is intended to wake up the sleeping tea leaves.
6. ‌Brewing and filling‌: Use the whirling water-filling method and add water to about two-thirds of the glass. Let it brew for 2 minutes to allow the tea leaves to fully steep.
